Pastry Description

:: Fruit Jalousie
(pronounced like jealousy except with an a sound in beginning as in apple)
A puffed pastry dough that has fresh fruit and a vanilla pastry cream, topped with more fluffy pastry dough. As a side note, jalousie means Venetian blinds in French.   

:: Fruit Tart
A flaky pastry dough layered with vanilla pastry cream and decorated with fresh fruit and glazed with an Apricot glaze.  

:: Eclairs
A flaky choux pastry shell filled with rich pastry cream and top with dark chocolate.   

:: Paris-Brest
A delightful French dessert said to have been created by a pastry chef in honor of a bicycle race between Paris and Brest. It consists of a baked almond-topped choux pastry ring (patterned after a bicycle tire) that is split and filled with a praline-flavored buttercream.   

:: Linzer Torte
The Linzer Torte (or Linzertorte) is an Austrian and Hungarian torte with a lattice design on top of the pastry. Linzer Torte is a very short, crumbly pastry made of flour, unsalted butter, egg yolks, lemon zest, cinnamon and lemon juice, and ground hazelnuts, covered with a filling of thick raspberry,[2] or apricot jam. It is covered by a lattice of dough strips. The dough is rolled out in very thin strips of pastry and arranged to form a criscross design on top of the preserves. The pastry is brushed with lightly beaten egg whites, baked, and sometimes decorated with sliced almonds.  

:: Strawberry Diamonds
Puffed pastry filled with vanilla pastry cream and topped with apricot glazed strawberries with a light decoration of extra-bittersweet chocolate.

:: Black Forest Cake
Traditional black forest cake topped with whipped cream and a cherry.



  
:: Sacher Torte
(pronounced “soccer”)

Layers of sacher torte which is a thin light chocolate cake layered with apricot and enrobed in chocolate.

:: Tosca (pronounced toss-ka)
Layers of frangipan (a filling made with almonds) layered with raspberry filling and topped with almond Florentine (caramelized almonds) then dipped in chocolate.

:: Daquois (pronounced day-qua)
A almond meringue with a mocha-almond buttercream covered in toasted almonds and topped with cream and dark chocolate pieces.

:: Pavlova (pronounced pav·lo·va)
A light meringue shell filled with whipped cream and apricot glazed fruit.

:: Cream Puffs
A traditional light pastry dough lined with chocolate and filled with whipped cream presented as a beautiful swan.

:: Irish Crème Mousse in White Chocolate Cup
A dark chocolate Irish Crème Mousse presented in a Swiss White Chocolate cup.

:: White Chocolate Orange Mousse
A light white chocolate mousse flavored with a touch of Triple Sec layered on top of a vanilla torte.

:: Opera Torte
A Jaconde torte (almond sponge cake) layered with a rich coffee mousse and chocolate ganache and topped with dark chocolate.

:: Irish Cream Torte
Layers of vanilla cake and Irish Cream Mousse dipped in chocolate.

:: Dark Chocolate Cognac Mousse
A  chocolate sponge cake topped with rich chocolate mousse with a touch of Cognac, topped with whipped cream and a raspberry.

:: Citron
A lemon sponge cake layed with rich lemon buttercream and topped with chocolate.
